Ingredients

2# Small Red or Yellow (or both) potato
2 cups celery, chopped fine
1 1/2 cups onions, chopped fine
1/2 cup white vinegar
1 cup water
Salt and Pepper to taste
Olive oil
sliced olives
hard boil eggs

Recommended Instructions

Buy small potatoes, either red, yellow or both.
Boil potatoes until cooked; not too soft. No need to peel if you don't want to but be sure it's washed. Let them cool but not cold.

Boil 1 cup of water and 1/2 cup vinegar mixture till it's reduced to 1 cup.

In a large bowl, add a little olive oil then make layers of potatoes, celery, onions - add salt and pepper; then make another layer of same.

When done, add more olive oil and pour some of the acidified water over, toss and taste. If needed, add more acidified water, olive oil or salt/pepper until it suits your taste.

You may garnish with sliced olives and diced hard boiled eggs.

No need to refrigerate as there is no mayonnaise.
