Crispy Parmesan Fried Zucchini: Submitted by: Elaine Fukui | Date Added: 13 Aug 2021

2 medium zucchini, sliced crosswise
salt and pepper, to taste
1 cup flour
3 large eggs
1 cup panko
1/4 cup Parmesan cheese, grated
1 tablespoon Italian seasoning
Oil for frying

Recommended Instructions

1. Salt and pepper the zucchini slices.
2. Place the flour in a small bowl.
3. Whisk the eggs in another small bowl.
4. Combine the panko, Parmesan cheese and Italian seasoning in a third small bowl.
5. Dip the zucchini in the flour, then the egg, then the panko mixture.
6. Add a 1/2-inch layer of oil to a medium saucepan. Heat to medium high (350 F).
7. Add the zucchini, in batches, and fry for 4 to 5 minutes, or until the zucchini is brown and crispy.
8. Serve with ranch, marinara or your favorite dipping sauce.

Note: If you use an air fryer, arrange the zucchini slices in an even layer in the air fryer basket. Cook at 400 F for 5 minutes, flip and spray with olive oil. Continue cooking for 5 minutes or until done.
