Recommended Instructions

This is for the kind of olives that you but with a heavy salt brine , which I rarely see here ..

If Olives seem too salty:

Soak olives for a few minutes or an hour in filtered cold water

Drain: set aside

In mason jar

Squeeze a lemon and maybe even put 1/4 or half the lemon in the jar, one or two cloves of garlic or as much as you think (maybe whack garlic with side of knife to release flavor more easily )

Depending on what you want :
Put in a good amount of fresh chopped mint

Or herbs de Provence

Or chopped rosemary


Or whatever herbs you like

You may need to re-add salt or not

I think the lemon and garlic are key ...

I might use the juice of two lemons

Cover with Olives, cold water , and top with a layer of olive oil , shake it up, refrigerate for a week or more —
Should be flavor infused by then

Important : you don’t want to take out all the salt from the Olives , but some Olives are just extremely salty...
