8 cups rice
4 cups water
4 cups chicken broth
8 packets achiote (Sazon Goya brand)
1.5 lbs. chopped pork
Salt and pepper to your liking
1/2 round onion, diced
1 can Gandule beans (pigeon peas)
1 small bunch Chinese parsley, diced
1 small can tomato sauce
1 can olives

Recommended Instructions

Wash and cook 8 cups rice with 4 cups water and 4 cups chicken broth.
Pour achiote seasoning from 4 packets into rice pot before cooking.
While rice is cooking, cook chopped pork with salt and pepper to your liking.
Add onions, parsley and Gandule beans.
Add tomato sauce, using less than the entire can based on your preference.
Sprinkle remaining 4 packets achiote seasoning into mix.
Add olives in last.
When rice is done cooking, remove rice from pot in a large bowl or foil pan. Slowly fold in pork mixture into rice.
