2 lbs pork (such as pork butt, lean belly)
2 tbsp garlic, finely chopped
3 bay leaves
6 tbsp vinegar
1 1/2 tsp salt
5-10 peppercorns
- boiling water

shoyu, optional
oil, if necessary

Recommended Instructions

Clean and slice the pork into bite size chunks. Mix pork with the garlic, bay leaves, vinegar, salt, and peppercorn in a pot and allow them to marinate for 10 minutes or so. Add enough boiling water to cover the pork and let simmer on medium heat with the pot uncovered to allow water to evaporate.

After the water is evaporated, turn the pork chunks to brown evenly on all sides in its own fat (add oil if necessary). Drizzle shoyu for color, if necessary.
