Batter for fried Fish and Shrimp: Submitted by: James Bullard | Date Added: 29 Nov 2015

1 cup rice flour
1/4 cup corn starch
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 cup ice cold water or enough to make a medium pancake consistency batter

Recommended Instructions

Place dry ingredients in a bowl and mix together. Stir in the ice cold water and mix well, adding additional cold water if needed to make the batter the consistancy of a medium pancake batter. Preheat oil in deep pot or deep fryer to 350 to 375 degrees. Dip fish fillets or shrimp into the batter to coat thoroughly. Allow excess batter to drip of and slowly lower the fish or shrimp into the hot oil. Fry for approximately 3 to 6 minutes or until golden brown and crisp. This batter is also excellent for chicken nuggets made from cutting a chicken breast fillet into nuggets.
